Hospitality is an ancient tradition at Mont Saint Michel...  In the Middle Ages, the inhabitants of Mont Saint Michel welcomed pilgrims to their inns where they were given food and a roof over their heads.

It was therefore natural for Annette and Victor Poulard to open their inn in 1888 to welcome pilgrims and food lovers from all over the world.

The beginning of a legend...

It was the secret recipe for her omelette which made a name for La Mère Poulard around the world.  To comfort her guests after a long, often difficult journey, Annette kept the fire in the large fireplace alight at all times and made her famous soufflée omelette over an open fire.
